Whole Wheat Matcha Waffles

Serves: 3 large waffles
 
Ingredients
  • 1 cup of whole wheat flour
  • 1 tablespoon matcha powder
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • 1 tablespoon lemon zest
  • 2 tablespoons coconut oil, softened
  • 1 egg
  • ¾ cup milk or milk substitute (I used Califia unsweetened Almond Milk)
Instructions
  1. Preheat waffle iron to medium heat.
  2. Sift all dry ingredients together in a large mixing bowl.
  3. Add lemon zest, holding a pinch for topping.
  4. Slowly mix in egg, coconut oil and milk, stir until smooth.
  5. Spray waffle-maker with oil, ladle ⅓ cup onto center of waffle iron and close until fully cooked.
  6. Top with butter or ghee, honey, blueberries and remaining lemon zest. Serve hot.
